The wheat beer is OK too, it's got a nice after taste, but as with all wheat beers they get you drunk quicker. Some of the herbs in question are dangerous, but Buhner very clearly states which those are in the book. On the other hand if the allergies are to the bittering compounds themselves, there may be no alternative but to look for alternate bittering spices.

If you are able to harvest it, beware it produces toxins when boiled so a cold infusion (dry hopping) would be required. That is to say, I don't think today's definition should include hops as a necessary ingredient, though they are certainly a typical one. not yet but i'm a big fan of historical brewing so it's definitely been on the list a while - i'd love to hear about your methods somewhere it wouldn't derail this thread i need to free a few kegs up - most of them are long term tied up with 18th/19th century pale ale recreations[estimations!
